Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Garlic and Deglaze

    Add the minced garlic and cook for another minute until fragrant. Pour in the white wine, scraping the bottom of the pot to deglaze. Allow the wine to reduce by half.

    Simmer the Soup

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes.

    Prepare Baguette Toppings

    While the soup is simmering, slice the baguette into thick slices and toast them in the oven until golden brown.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into bowls, top each with a slice of toasted baguette, and sprinkle with Gruyère cheese. Place the bowls under a broiler until the cheese is melted and bubbly.
