Marinate the Chicken
In a bowl, combine olive oil, garlic powder, onion powder, paprika, salt, black pepper, and lemon juice. Rub the mixture all over the chicken and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Smoker
Soak the apple wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once preheated, drain the wood chips and add them to the smoker box.

Smoke the Chicken
Place the marinated chicken in the smoker and cook for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Make sure to maintain a consistent temperature and add more wood chips as needed.

Rest and Serve
Once cooked, remove the chicken from the smoker and let it rest for 15 minutes before carving. Serve with white sauce.
