Prepare the Beef Ribs
Start by trimming any excess fat from the beef ribs. Pat them dry with paper towels and set aside.

Make the Dry Rub
In a medium bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, chili powder, and cayenne pepper. Mix well to combine.

Apply the Dry Rub
Generously apply the dry rub all over the beef ribs, making sure to cover all surfaces. Let the ribs sit at room temperature for about 30 minutes to absorb the flavors.
Smoking

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Add Wood Chips
Once the smoker is preheated, drain the wood chips and add them to the smoker box or directly onto the coals if using a charcoal smoker.

Smoke the Ribs
Place the seasoned beef ribs bone-side down in the smoker. Close the lid and smoke the ribs for about 6-8 hours, or until the internal temperature reaches 203°F (95°C).
