Steak Preparation

Season the Steak

Generously season both sides of the porterhouse steak with kosher salt and black pepper. Let it sit at room temperature for 30 minutes to allow the seasoning to penetrate the meat.

Preheat the Grill or Pan

Preheat your grill to high heat or heat a cast-iron skillet over high heat for about 5 minutes. Add olive oil to the skillet or brush it on the grill grates.

Sear the Steak

Place the porterhouse steak on the grill or in the skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

Flip the Steak

Flip the steak using tongs and sear the other side for an additional 4-5 minutes for medium-rare. Adjust the cooking time based on your desired doneness.

Rest the Steak

Once cooked to your liking, remove the steak from the heat and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute.

Make the Herb Butter

In a bowl, combine the softened unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix well until all ingredients are fully incorporated.

Slice the rested porterhouse steak against the grain and serve it topped with a dollop of the herb butter.
