Preparation

    Prepare the Rib-eye

    Take the rib-eye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

    Season the Steaks

    Pat the steaks dry with paper towels, then rub both sides with olive oil. Sprinkle salt, black pepper, and garlic powder evenly over both sides of the steaks.

Cooking

    Preheat the Pan

    Heat a large cast-iron skillet or grill pan over medium-high heat for about 5 minutes until it's very hot.

    Cook the Rib-eye

    Place the steaks in the hot skillet and cook for 4-5 minutes on one side without moving them to get a nice sear. Flip the steaks and cook for another 4-5 minutes for medium-rare, or to your desired doneness.

    If using, add the butter and rosemary to the pan during the last minute of cooking. Use a spoon to baste the steaks with the melted butter and herbs.

Resting

    Remove the steaks from the pan and place them on a cutting board. Cover loosely with aluminum foil and let them rest for about 5-10 minutes before slicing. This allows the juices to redistribute.
