    Prepare the Ribs

    Remove any membrane from the back of the ribs. Rinse and pat dry.

    Make the Dry Rub

    In a bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.

    Apply the Dry Rub

    Rub the dry rub mixture generously over the ribs, ensuring to cover all sides. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.

Cooking

    Prepare the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, Worcestershire sauce, honey, mustard, smoked paprika, salt, and pepper. Bring to a simmer over medium heat and cook for about 10 minutes, stirring occasionally.

    Cook the Ribs

    Preheat your grill to medium heat. Place the ribs bone-side down and cook for about 3 hours, basting with BBQ sauce every 30 minutes. Alternatively, you can cook them in the oven at 150°C (300°F) for 2.5-3 hours, covered with foil.

    Finish on the Grill

    After the ribs are tender, transfer them to the grill for a final sear. Grill each side for about 5-10 minutes, brushing liberally with BBQ sauce until caramelized.
