Method
Preparation
Marinate the Pork Chops
In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, fresh rosemary, and lemon juice. Mix well to create a marinade.
Coat the Chops
Place the pork rib eye chops in the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).
Grill the Chops
Remove the pork chops from the marinade and let any excess marinade drip off. Place the chops on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 145°F (63°C).
Rest the Chops
Once cooked, remove the chops from the grill and let them rest for 5 minutes to allow the juices to redistribute.
Serving
Plate and Garnish
Serve the pork rib eye chops on a plate, garnish with lemon wedges and fresh parsley if desired.
