Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper. Mix well until all ingredients are combined.

  2. 2

    Marinate the Meat

Place the lamb cutlets, T-bone steak, pork loin chops, and rib chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the meats, ensuring they are well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for best results.

Cooking

  1. 3

    Cook the Meat

Preheat your grill or skillet over medium-high heat. Remove the meat from the marinade, allowing excess to drip off. Cook lamb cutlets for about 4-5 minutes per side, T-bone for 6-8 minutes per side, pork loin chops for 5-6 minutes per side, and rib chops for 6-7 minutes per side, or until desired doneness is achieved.

  2. 4

    Prepare the Sides

While the meat is cooking, prepare the garlic mashed potatoes as per your recipe or package instructions. For the grilled asparagus, toss the asparagus in a little olive oil, salt, and pepper, and grill for 4-5 minutes until tender but still crisp.

Serving

  1. 5

    Plate the Dish

Once the meat is cooked, let it rest for a few minutes before serving. Plate the lamb cutlets, T-bone steak, pork loin chops, and rib chops alongside the garlic mashed potatoes and grilled asparagus. Garnish with additional fresh rosemary if desired.
