Crust Preparation

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well-coated.

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove and let cool.

Cheesecake Filling Preparation

    Melt the White Chocolate

    In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring in between until smooth. Set aside to cool slightly.

    Mix the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth.

    Combine Ingredients

    Add the melted white chocolate, granulated sugar, sour cream, and vanilla extract to the cream cheese. Beat until well combined.

    Incorporate Eggs

    Add the eggs, one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
