Preparation
Prepare the Marinade
In a small bowl, mix together the olive oil, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt to create a marinade.
Marinate the Ribs
Rub the marinade all over the beef ribs, ensuring that it coats them evenly. Cover the ribs with plastic wrap and let them marinate in the refrigerator for at least 2 hours, preferably overnight.
Smoking
Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).
Smoke the Ribs
Once the smoker is ready, place the marinated beef ribs on the smoker rack. Add the soaked hickory wood chips to the smoker box or directly onto the coals, if using a charcoal smoker.
Cook the Ribs
Close the smoker lid and smoke the ribs for about 5-6 hours, or until the internal temperature reaches 203°F (95°C). Be sure to maintain a consistent temperature throughout the cooking process.
