Method
Preparation
- 1
Season the Meat
In a small bowl, mix the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the mixture all over the prime rib roast. Allow the roast to sit at room temperature for at least 1 hour to absorb the flavors.
- 2
Preheat the Oven
Preheat your oven to 450°F (232°C).
Cooking
- 3
- 4
Roast the Prime Rib
Transfer the roasting pan to the oven. Roast the prime rib for about 15 minutes at 450°F (232°C), then reduce the oven temperature to 325°F (163°C) and continue roasting. For medium-rare, cook until the internal temperature reaches 130°F (54°C), approximately 1.5 to 2 hours depending on the size of the roast.
- 5
Prepare Vegetables (Optional)
If using, place chopped vegetables in the roasting pan around the prime rib during the last hour of cooking. Add beef broth to keep the vegetables moist.
Resting and Serving
- 6
Rest the Meat
Once cooked to your desired doneness, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
- 7
Slice and Serve
Slice the prime rib against the grain into desired thickness. Serve with the roasted vegetables and pan juices, if desired.
