Method
Preparing the Pig's Head

Clean and Prepare
Thoroughly clean the pig's head, removing any hair and impurities. Butcher into smaller sections (cheeks, jowl, etc.) for easier cooking.

Season
Rub the pig's head pieces with salt and black pepper. Let it sit for at least 30 minutes to absorb the flavors.

Sear
In a large skillet, heat olive oil over medium heat. Sear the pieces of the pig's head until golden brown on all sides, about 10 minutes.

Slow Cook
Transfer the seared meat to a slow cooker or oven-safe pot. Add water to cover and cook on low for 6-8 hours until the meat is tender and falling off the bone.

Add Stock and Wine
Slowly add beef or pork stock and red wine to the roux, whisking constantly to prevent lumps. Bring to a simmer and let it thicken for about 10 minutes.

Season
Add fresh thyme and season with salt and pepper to taste. Let it simmer for an additional 5 minutes, then remove from heat.
Serving

Toast the Bread
Toast the slices of bread until golden brown and crispy.

Assemble the Dish
Place generous portions of the tender pig's head meat on the toasted bread. Drizzle with Blacklock gravy and top with pickled chillies.

Serve immediately while warm, garnished with extra pickled chillies if desired.
