Meats

Method

Preparation of Marinade

  1. 1

    Prepare the Marinade

In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, black pepper, paprika, and lemon juice to create a marinade.

Marinating the Meats

  1. 2

    Marinate the Meats

Place the lamb cutlets, T-bone steak, pork loin, and rib eye steaks in a large zip-lock bag or a shallow dish. Pour the marinade over the meats, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.

Cooking the Meats

  1. 3

    Grill or Pan-Seer the Meats

Preheat the grill or a heavy skillet over medium-high heat. Remove the meats from the marinade, allowing excess marinade to drip off. Grill or pan-sear the lamb cutlets for 3-4 minutes per side, T-bone for 4-5 minutes per side, pork loin for about 6-7 minutes per side, and rib eye steaks for 4-5 minutes per side, or until they reach your desired doneness.

Preparing Sides

  1. 4

    Prepare the Vegetable Medley

While the meats are cooking, you can prepare the vegetable medley. Toss the zucchini, bell peppers, and carrots in olive oil, season with salt and pepper, and roast in the oven at 200°C (400°F) for about 20-25 minutes until tender.

  2. 5

    Cook the Potatoes

Boil the cubed potatoes in salted water until tender, approximately 15-20 minutes. Drain and serve with a sprinkle of salt and a drizzle of olive oil.

Serving

  1. 6

    Plate the Dish

Once the meats are cooked to your liking, let them rest for a few minutes before slicing (if necessary). Serve the meats alongside the roasted vegetable medley and boiled potatoes.
