Pie Crust

Method

Pie Crust Preparation

  1. 1

    Make the Pie Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

  2. 2

    Incorporate Butter

Cut the unsalted butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.

  4. 4

    Chill the Dough

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook the Meat

In a large skillet over medium heat, add the chopped beef and pork. Cook until browned, breaking it apart with a spatula as it cooks.

  2. 6

    Add Vegetables

Add the diced onion, minced garlic, diced carrots, and diced potato to the skillet. Cook until the onion is translucent and the vegetables are tender, around 5-7 minutes.

  3. 7

    Season and Simmer

Stir in the beef broth, Worcestershire sauce, thyme, black pepper, and salt. Bring to a simmer and let cook for about 10 minutes until the mixture thickens slightly.

  4. 8

    Cool the Filling

Remove from heat and let the filling cool slightly while you prepare the crust.

Assembling and Baking the Pie

  1. 9

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 10

    Roll Out the Dough

On a floured surface, roll out half of the chilled dough to fit your pie dish. Place the rolled dough into the dish.

  3. 11

    Add the Filling

Spoon the cooled filling into the prepared pie crust, spreading it evenly.

  4. 12

    Cover with Top Crust

Roll out the other half of the dough and place it over the filling. Seal the edges by pressing them together and cut slits in the top crust for steam to escape.

  5. 13

    Egg Wash

Brush the top crust with the beaten egg to give it a golden color.

  6. 14

    Bake the Pie

Bake in the preheated oven for 45-50 minutes or until the crust is golden brown.

  7. 15

    Cool and Serve

Let the pie cool for at least 10 minutes before slicing. Serve warm.
