    Wash and Peel Potatoes

    Wash the Russet potatoes thoroughly under cold running water. Peel the skin off using a vegetable peeler and then slice them into thick chips (about 1 cm thick).

    Soak the Potatoes

    Place the sliced potatoes into a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and achieve a crispier texture.

Cooking

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare Beef Dripping

    In a roasting pan, pour the beef dripping and place it in the preheated oven for about 10 minutes, until it's hot and shimmering.

    Dry and Season Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel. In a large bowl, toss the dried potatoes with salt, black pepper, and paprika until evenly coated.

    Coat with Dripping

    Carefully remove the hot roasting pan from the oven. Add the seasoned potato chips to the pan in a single layer. Make sure they are well coated in the hot beef dripping.

    Return the pan to the oven and bake for 30-35 minutes, flipping the chips halfway through cooking, until they are golden brown and crispy.
