Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 450°F (232°C) to ensure that it is hot enough for roasting the prime rib.

  2. 2

    Prepare the Meat

Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 1 hour before cooking to ensure even cooking.

  3. 3

    Season the Roast

In a small bowl, mix together the kosher salt, black pepper, garlic powder, and dried rosemary. Rub the olive oil all over the prime rib roast, then generously season it with the spice mixture on all sides.

Cooking

  1. 4

    Roast the Prime Rib

Place the seasoned prime rib roast on a rack in a roasting pan, bone side down. Insert into the preheated oven and roast at 450°F (232°C) for 20 minutes.

  2. 5

    Lower the Temperature

After 20 minutes, reduce the oven temperature to 325°F (163°C) without opening the oven door. Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare, 140°F for medium).

  3. 6

    Rest the Roast

Once the desired temperature is reached, remove the prime rib from the oven and tent it loosely with aluminum foil. Let it rest for at least 20-30 minutes before carving to allow the juices to redistribute.

Serving

  1. 7

    Carve and Serve

After resting, slice the prime rib against the grain into thick slices. Serve with fresh rosemary and thyme sprigs if desired.
