    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thick chips (approximately 1 inch wide). Place the cut chips in a bowl of cold water to remove excess starch. Let them soak for at least 30 minutes.

    Preheat the Oven

    Preheat your oven to 220°C (428°F).

    Drain and Dry the Chips

    After soaking, drain the potato chips and pat them dry with a clean kitchen towel to remove excess moisture.

    Heat the Beef Dripping

    In a large roasting pan, add the beef dripping and place it in the preheated oven to melt. This should take about 10 minutes.

    Roast the Chips

    Once the beef dripping is melted and hot, carefully add the dried potato chips to the pan. Use a spatula to toss them gently in the dripping until they are evenly coated.

    Sprinkle the sea salt and black pepper over the chips, then return the pan to the oven.
