1. Prepare the Potatoes

Peel the Russet potatoes and cut them into thick chips (approximately 1 inch wide). Place the cut chips in a bowl of cold water to remove excess starch. Let them soak for at least 30 minutes.

Preheat your oven to 220°C (428°F).

3. Drain and Dry the Chips

After soaking, drain the potato chips and pat them dry with a clean kitchen towel to remove excess moisture.

4. Heat the Beef Dripping

In a large roasting pan, add the beef dripping and place it in the preheated oven to melt. This should take about 10 minutes.

5. Roast the Chips

Once the beef dripping is melted and hot, carefully add the dried potato chips to the pan. Use a spatula to toss them gently in the dripping until they are evenly coated.

6. Season the Chips

Sprinkle the sea salt and black pepper over the chips, then return the pan to the oven.

7. Bake and Crisp

Bake the chips for 30-35 minutes, turning them halfway through, until they are golden brown and crispy.

8. Serve

Once cooked, remove the chips from the oven and let them rest for a few minutes before serving.
