Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, minced garlic cloves, chopped rosemary, lemon juice, salt, and black pepper. Mix well to create the marinade.

  2. 2

    Marinate the Lamb

Place the lamb rump in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking

  1. 3

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 4

    Sear the Lamb

Heat a large ovenproof skillet over medium-high heat. Remove the lamb from the marinade, allowing any excess to drip off. Sear the lamb in the hot skillet for about 3-4 minutes on each side until browned.

  3. 5

    Roast the Lamb

Transfer the skillet to the preheated oven and roast the lamb for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy.

  4. 6

    Rest the Lamb

Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.

Preparing Sides

  1. 7

    Cook the Potatoes

While the lamb is resting, boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly before serving.

  2. 8

    Blanch the Green Beans

Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes. Drain and rinse under cold water to stop the cooking process.

Serving

  1. 9

    Plate the Dish

Slice the lamb rump against the grain and serve with the boiled potatoes and blanched green beans. Drizzle any remaining juices from the skillet over the lamb for added flavor.
