Method

Preparation

  1. 1

    Prepare the Marrow

Cut the marrow in half lengthwise and scoop out the seeds and soft inner flesh using a spoon. You should be left with a hollow shell that can be filled with the spread.

  2. 2

    Roast the Garlic

Preheat your oven to 375°F (190°C). Peel the garlic cloves and place them in a small piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of salt. Wrap the foil tightly and roast in the oven for about 20-25 minutes, or until the garlic is soft and fragrant.

Making the Spread

  1. 3

    Blend the Ingredients

In a bowl, combine the roasted garlic (squeezed out of its skins), remaining olive oil, salt, black pepper, and fresh parsley. If using, add lemon juice and red chili flakes for extra flavor.

  2. 4

    Mash and Mix

Use a fork or a food processor to mash and mix all the ingredients together until you achieve a smooth, spreadable consistency. Adjust seasoning to taste.

Serving

  1. 5

    Serve the Spread

Spoon the garlic marrow spread into the hollowed-out marrow shells or a serving bowl. Garnish with additional parsley if desired and serve with toasted bread or crackers.
