Prepare the Marrow
Cut the marrow in half lengthwise and scoop out the seeds and soft inner flesh using a spoon. You should be left with a hollow shell that can be filled with the spread.

Roast the Garlic
Preheat your oven to 375°F (190°C). Peel the garlic cloves and place them in a small piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of salt. Wrap the foil tightly and roast in the oven for about 20-25 minutes, or until the garlic is soft and fragrant.

In a bowl, combine the roasted garlic (squeezed out of its skins), remaining olive oil, salt, black pepper, and fresh parsley. If using, add lemon juice and red chili flakes for extra flavor.
