In a large skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté until they are soft, about 5-7 minutes.

Stir in minced garlic, cumin, chili powder, and salt. Cook for an additional 1-2 minutes until fragrant.

Combine Remaining Ingredients
Add black beans, corn kernels, and chopped spinach to the skillet. Mix well and cook until the spinach is wilted, about 3-4 minutes. Remove from heat and stir in 1 cup of shredded cheese.

Assemble the Enchiladas

Prepare Tortillas
Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a small amount of the sauce on the bottom.

Take a corn tortilla, fill it with about 1/4 cup of the vegetable filling, roll it up tightly, and place it seam-side down in the prepared baking dish. Repeat with all tortillas.
