Method

Preparation

  1. 1

    Tenderizing the Steak

Using a meat mallet, pound each beef round steak to about 1/2 inch thickness. This will help tenderize the meat.

  2. 2

    Seasoning the Steak

Rub the pound steaks with salt, black pepper, and garlic powder on both sides. Let them sit for about 15 minutes to absorb the flavors.

Breading Process

  1. 3

    Prepare Breading Station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs mixed with milk, and one with seasoned flour (flour mixed with paprika and cayenne pepper).

  2. 4

    Coating the Steak

First, dredge each seasoned steak in the plain flour, shaking off any excess. Next, dip it into the egg and milk mixture, ensuring it is well coated. Finally, press it into the seasoned flour to coat completely.

Frying

  1. 5

    Heat Oil

In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

  2. 6

    Fry the Steaks

Carefully add the breaded steaks to the hot oil, cooking in batches if necessary. Fry each steak for about 4-5 minutes on each side or until golden brown and crispy.

  3. 7

    Drain Excess Oil

Remove the fried steaks from the skillet and place them on a paper towel-lined plate to drain excess oil.

Making the Gravy

  1. 8

    Prepare the Roux

In the same skillet used for frying, reduce the heat to medium and add the butter. Once melted, whisk in the flour, cooking for about 1-2 minutes until it turns golden brown.

  2. 9

    Adding Milk

Gradually whisk in the milk, stirring constantly until the gravy thickens (about 3-5 minutes). Season with salt and black pepper to taste.

Serving

  1. 10

    Plate the Dish

Serve the Texas-sized chicken fried steak hot, drizzled with gravy. It pairs well with mashed potatoes or green beans.
