Method
Cooking the Pasta

Boil Water
In a large pot, bring 4-5 liters of water to a rolling boil. Add 1 tablespoon of salt to the water.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions, usually about 8-10 minutes, or until al dente.

Drain and Set Aside
Once cooked, drain the spaghetti in a colander and set aside. Do not rinse.
Making the Marinara Sauce

Sauté Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion is translucent, about 5 minutes.

Add Tomatoes and Spices
Add the canned whole tomatoes (with juices), dried oregano, dried basil, sugar, salt, and black pepper. Stir to combine.

Simmer Sauce
Bring the sauce to a simmer and let it cook for 20-25 minutes, stirring occasionally, until it thickens. Adjust seasoning to taste.

Blend Sauce (Optional)
For a smoother sauce, use an immersion blender to blend the sauce to your desired consistency.
