Making the Pastry Shell

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Preparing the Filling

    Prepare Apple Filling

    In a medium bowl, combine diced apples, granulated sugar, ground cinnamon, and lemon juice. Mix well and set aside.

    Prepare Cherry Filling

    If using canned cherry filling, open the can and set aside. If using homemade, ensure it is cooled and thickened.

Assembling the Pies

    Roll Out Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into circles approximately 5 inches in diameter.

    Fill the Pies

    Place a tablespoon of the apple mixture or cherry filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal.

    Crimp Edges

    Using a fork, crimp the edges to ensure they are sealed tightly.

Frying the Pies

    Heat Oil

    In a large deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

    Fry the Pies

    Carefully place the filled pies in the hot oil, frying a few at a time to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown.

    Drain Excess Oil

    Use a slotted spoon to remove the pies from the oil and place them on a paper towel-lined plate to drain excess oil.

Serving the Pies

    Dust with Powdered Sugar

    Once the pies have cooled slightly, dust them with powdered sugar before serving.
