Preparing the Turkey

Clean the Turkey
Remove the turkey from its packaging, and remove any giblets or neck from the cavity.

Preheat the Oven
Preheat your oven to 325°F (165°C).

Season the Turkey
Pat the turkey dry with paper towels. Rub the entire turkey with olive oil, then season generously with salt and black pepper. Make sure to get under the skin wherever possible.

Roasting the Turkey

Place in Oven
Place the turkey breast side up on a roasting rack in a roasting pan. Insert a meat thermometer into the thickest part of the thigh without touching the bone.

Roasting Time
Roast the turkey in the preheated oven. Cook for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Baste the Turkey
Every 30 minutes, baste the turkey with the drippings from the pan to keep the meat moist.

Once the turkey is done roasting, remove it from the oven and let it rest for at least 20-30 minutes before carving.

In a saucepan over medium heat, whisk together the separated fat and all-purpose flour. Cook for 2-3 minutes until the mixture turns golden brown.

Slowly whisk in the chicken broth and the reserved turkey drippings. Bring to a simmer and cook until thickened, about 5-10 minutes. Season with salt and black pepper to taste.
