Prepare the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Wash and Dry Potatoes

    Thoroughly wash and dry the Russet potatoes to remove any dirt.

    Bake the Potatoes

    Prick each potato a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a knife.

Prepare the Skins

    Cool and Cut Potatoes

    Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer of potato inside the skin.

    Season the Skins

    Brush the insides of the potato skins with olive oil and season with salt and black pepper.

    Bake the Skins Again

    Place the potato skins cut-side down on a baking sheet. Bake for an additional 10-15 minutes, or until they are crispy.

Add Toppings

    Fill the Skins

    Flip the potato skins over and fill each one with shredded cheddar cheese, crumbled bacon, and sliced green onions.

    Melt the Cheese

    Return the filled potato skins to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.

    Plate the Skins

    Remove the potato skins from the oven and let them cool slightly before serving.

    Add Dipping Sauces

    Serve the potato skins with sour cream and salsa on the side for dipping.
