Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Crust Mixture
In a medium mixing bowl, combine almond flour, melted butter, cinnamon, and salt. Mix until the ingredients are well combined and resemble wet sand.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Make sure it is compact.

Bake the Crust
Bake the crust in the preheated oven for about 10-12 minutes or until lightly golden. Remove from the oven and set aside to cool.
Filling Preparation

Mix the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy, about 2-3 minutes.

Add Remaining Ingredients
Add the Greek yogurt, vanilla extract, lemon juice, eggs, and stevia or erythritol to the cream cheese. Mix until well combined and smooth, scraping down the sides as needed.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 40-50 minutes, or until the edges are set and the center has a slight jiggle.

Cool and Chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
