Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel.

    Cut and Season

    Cut the potatoes in half lengthwise. Scoop out some of the flesh to create a shallow boat. Brush the cut sides with olive oil and season with salt and black pepper.

Baking the Potatoes

    Bake the Potatoes

    Place the potato halves cut side down on a baking sheet. Bake in the preheated oven for about 25-30 minutes, or until the skins are crispy and the insides are tender.

Preparing the Toppings

    Cook the Bacon

    While the potatoes are baking, cook the bacon slices in a pan over medium heat until crispy. Remove from the pan and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Chop the Green Onions

    Finely chop the green onions and set aside for garnish.

Assembling the Loaded Potato Skins

    Add Cheese and Bacon

    Once the potatoes are baked, remove them from the oven and flip them over. Sprinkle the aged Cheddar cheese generously over the potato skins, followed by the crumbled bacon.

    Melt the Cheese

    Return the loaded potato skins to the oven and bake for an additional 5-10 minutes, or until the cheese has melted and is bubbly.

Serving
