For Grilled Catfish

    Prepare the Marinade

    In a small bowl, mix together the Cajun seasoning, olive oil, lemon juice, salt, and black pepper to create a marinade.

    Marinate the Catfish

    Place the catfish fillets in a shallow dish. Pour the marinade over the fillets, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Catfish

    Remove the catfish from the marinade and place them on the grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    Serve the grilled catfish fillets over a bed of cooked rice.

For Fried Catfish

    Prepare the Coating

    In a shallow dish, mix together the cornmeal, all-purpose flour, salt, black pepper, and paprika.

    Dip each catfish fillet into the buttermilk, ensuring they are well-coated.

    After dipping in buttermilk, dredge each fillet in the cornmeal mixture, coating evenly.

    In a large frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).
