Catfish Fillets

Creole Garlic Butter Sauce

Method

Preparing the Dirty Rice

    Cook the Meat

    In a large skillet over medium heat, cook the ground beef or sausage until browned. Drain excess fat.

    Sauté Vegetables

    Add the diced onion, celery, and green bell pepper to the skillet and sauté until the vegetables are softened, about 5 minutes.

    Add Garlic and Seasonings

    Stir in the minced garlic, Cajun seasoning, bay leaf, salt, and black pepper. Cook for an additional minute until fragrant.

    Add Rice and Broth

    Add the long-grain white rice and chicken broth to the skillet. Bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.

    Finish the Rice

    Remove the bay leaf and fluff the rice with a fork before serving.

Grilling the Catfish

    Prepare the Catfish

    Rub the catfish fillets with Cajun seasoning on both sides.

    Heat the Grill

    Preheat the grill to medium-high heat and brush the grill grates with olive oil.

    Grill the Catfish

    Place the seasoned catfish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Making the Creole Garlic Butter Sauce

    Melt the Butter

    In a small saucepan over low heat, melt the stick of unsalted butter.

    Add Garlic and Seasoning

    Once melted, add the minced garlic, Cajun seasoning, and lemon juice to the butter. Cook for an additional 2-3 minutes, stirring frequently until the garlic is fragrant but not browned.

    Add Parsley

    Stir in the chopped fresh parsley and remove from heat.

Serving

    Plate the Dish

    On a serving plate, layer the dirty rice, top with grilled catfish fillets, and drizzle with the Creole garlic butter sauce.

    Garnish and Serve

    Garnish with additional parsley if desired and serve hot.
