    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, and paprika. Gradually whisk in the beer or sparkling water until the batter is smooth and free of lumps. Let the batter rest for about 10 minutes.

    In a large heavy-bottomed pot or deep skillet, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; if it sizzles and bubbles, the oil is ready.
