    Make the Remoulade Sauce

    In a bowl, combine the mayonnaise, Dijon mustard, hot sauce, capers, lemon juice, and minced garlic. Mix well and set aside in the refrigerator to chill.

Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Season with salt and black pepper.

    Bread the Tomatoes

    Set up a breading station with one bowl of flour, one bowl of buttermilk, and one bowl of cornmeal. Dip each tomato slice first in flour, then in buttermilk, and lastly in cornmeal, ensuring they are fully coated.

    Fry the Tomatoes

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Cooking Bacon

    In a separate skillet, cook the bacon slices over medium heat until crispy, about 4-5 minutes per side. Drain on paper towels.

Assembling the BLT

    Toast the wheatberry bread slices until golden brown.

    On a slice of toasted bread, spread a generous layer of remoulade sauce. Add crispy bacon, fried green tomatoes, and a handful of lettuce. Top with another slice of bread. Repeat for additional sandwiches.
