    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes in the refrigerator to tenderize and add flavor.

    Mix Dry Ingredients

    In a large bowl, combine cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Catfish

    Remove the catfish from the buttermilk and let any excess drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, and salt. Stir until well combined and refrigerate until serving.
