Preparing the Turkey Breast

Prepare the Turkey
Preheat your oven to 350°F (175°C). Pat the turkey breast dry with paper towels. In a small bowl, mix together black pepper, salt, garlic powder, onion powder, and olive oil. Rub this mixture all over the turkey breast.

Roast the Turkey
Place the seasoned turkey breast on a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally with drippings.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for 15-20 minutes before slicing.
Making the Bread Dressing

Prepare the Dressing Mixture
In a large skillet, melt the butter over medium heat. Add diced celery and chopped onion, and sauté until softened, about 5-7 minutes. In a large bowl, combine the sautéed vegetables with the bread cubes, chicken broth, sage, thyme, salt, and pepper. Mix well.

Make the Gravy
In a saucepan, combine turkey drippings and flour over medium heat. Whisk continuously until it forms a roux. Gradually add chicken broth, whisking until smooth. Season with salt and pepper. Bring to a boil and cook for 5-7 minutes until thickened.
Serving

Serve the Dish
Slice the roasted turkey breast and serve it on top of the baked bread dressing. Ladle the turkey gravy over the turkey and dressing. Accompany with steamed carrots and green beans.
