Season the Roast
Rub the beef chuck roast with salt, black pepper, thyme, and rosemary on all sides.
Cooking

Sear the Roast
In a large skillet, heat olive oil over medium-high heat. Add the seasoned roast and sear for 3-4 minutes on each side until browned.

Add Ingredients to Slow Cooker
Transfer the seared roast to the slow cooker. Add the chopped carrots, sliced onions, minced garlic, and bay leaves around the roast.

Pour in the Broth
Pour the beef broth over the roast and vegetables in the slow cooker.

Cook the Roast
Cover the slow cooker and set it to low heat. Cook for 8-10 hours, or until the meat is fork-tender.

Serve
Once the pot roast is done, remove it from the slow cooker and let it rest for 10 minutes before slicing. Serve with the vegetables and ladle the savory brown gravy over the top.
