Prepare the Chicken and Broth

    Cook the Chicken

    In a large pot over medium heat, add the chicken thighs and pour in the chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the chicken is cooked through.

    Remove the chicken from the pot and set aside to cool. In the same pot, add the diced carrots, celery, chopped onion, minced garlic, salt, black pepper, dried thyme, and bay leaves. Cook for about 10 minutes until the vegetables are tender.

    Shred the Chicken

    Once the chicken has cooled, shred it into bite-sized pieces. Return the shredded chicken to the pot with the vegetables.

Make the Dumplings

    Combine Dry Ingredients

    In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

    Add Wet Ingredients

    Add the milk and melted butter to the dry ingredients. Stir until just combined; do not overmix.

Cook the Dumplings

    Add Dumplings to the Broth

    Bring the pot of broth and chicken to a gentle simmer. Using a spoon, drop spoonfuls of the dumpling batter into the simmering broth.

    Cover the pot and let the dumplings cook for about 15-20 minutes, until they are fluffy and cooked through. Do not lift the lid during this time.

Serve the Dish
