    Marinate the Chicken

    In a bowl, combine olive oil, minced garlic, chopped rosemary, zest and juice of one lemon. Mix well and add the chicken breasts. Marinate for at least 30 minutes.

    Cook the Chicken

    Preheat the oven to 375°F (190°C). Place the marinated chicken breasts on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

    Prepare Quinoa

    Rinse quinoa under cold water. In a pot, bring vegetable broth to a boil, add the quinoa, and reduce heat to low. Cover and simmer for about 15 minutes or until the liquid is absorbed.

    While the quinoa cooks, dice the bell peppers and zucchini. In a skillet, heat a tablespoon of olive oil and sauté the vegetables until tender, about 5-7 minutes.

    Once the quinoa is cooked, fluff it with a fork. Mix in the sautéed vegetables and cherry tomatoes. Serve alongside the baked chicken.
