Preparing Catfish

Season the Fillets
Pat the catfish fillets dry with paper towels. Rub the cajun seasoning evenly over both sides of each fillet, followed by a sprinkle of salt and black pepper.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Fillets
Place the seasoned catfish fillets in the skillet and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and set aside.

Rinse the Rice
In a fine mesh strainer, rinse the long-grain rice under cold water until the water runs clear.

Sautéing Vegetables

Prepare the Vegetables
Chop the bell peppers into bite-sized pieces and slice the zucchini into thin rounds. Mince the garlic cloves.

Sauté the Vegetables
In the same skillet used for the catfish, add 1 tablespoon of olive oil over medium heat. Add the garlic and sauté for 30 seconds until fragrant. Then add the bell peppers and zucchini, season with salt and black pepper, and cook for about 5-7 minutes until the vegetables are tender.
