Method

Preparing the Brisket

    Prepare the Rub

    In a bowl, mix together the brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper, and salt.

    Season the Brisket

    Rub the mustard all over the brisket. Then, generously apply the spice rub mixture on all sides of the brisket.

    Prepare for Smoking

    Wrap the seasoned brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Brisket

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and add your choice of wood chips for smoking.

    Smoke the Brisket

    Place the brisket in the smoker fat side up. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

Making the BBQ Sauce

    Combine Ingredients

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper.

    Simmer the Sauce

    Bring the mixture to a boil over medium heat, then reduce to low and let it simmer for 15-20 minutes, stirring occasionally.

Preparing the Sides

    Prepare Coleslaw

    In a large bowl, combine shredded cabbage and carrots. Toss with your favorite coleslaw dressing and refrigerate until ready to serve.

    Bake Cornbread

    Follow your favorite cornbread recipe to make a batch of cornbread. Allow it to cool before slicing.

Serving

    Slice the brisket against the grain and serve with BBQ sauce and your choice of sides (coleslaw and cornbread).
