Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare the Squash

Peel, seed, and cube the butternut squash into small pieces.

  3. 3

    Cook the Squash

In a large pot of boiling salted water, add the cubed butternut squash. Cook for about 10-15 minutes or until tender. Drain and set aside.

  4. 4

    Sauté the Onion and Garlic

In a skillet over medium heat, melt a small amount of butter or oil. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

Mixing

  1. 5

    Combine Ingredients

In a large mixing bowl, combine the cooked butternut squash, sautéed onion and garlic, eggs, milk, shredded cheddar cheese, cream cheese, salt, black pepper, thyme, and paprika. Mix until well combined.

Baking

  1. 6

    Prepare the Casserole Dish

Grease a 9x13 inch casserole dish with butter or non-stick spray.

  2. 7

    Transfer the Mixture

Pour the squash mixture into the prepared casserole dish, spreading it evenly.

  3. 8

    Prepare the Topping

In a small bowl, melt the butter and mix it with the breadcrumbs until well combined. Sprinkle the breadcrumb mixture evenly over the casserole.

  4. 9

    Bake

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set.

Serving

  1. 10

    Cool and Serve

Allow the casserole to cool for a few minutes before slicing. Serve warm as a side dish or main course.
