Preparation of Potatoes

    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and prick them with a fork several times. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until fork-tender.

Prepare the Filling

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, chop the bacon into small pieces.

    Prepare the Cheese and Onions

    Grate the cheddar cheese if not pre-grated. Chop the green onions (both white and green parts) and set aside.

Stuffing the Potatoes

    Stuff the Baked Potatoes

    Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Cut a slit on the top of each potato and gently squeeze the ends to open them. Fluff the insides with a fork and add the chopped bacon, grated cheddar cheese, green onions, salt, and black pepper. Mix them well.

    Return the stuffed potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly. Serve hot with a dollop of sour cream on the side.
