Prep and Rub

    Prepare ribs

    Remove the thin membrane from the bone-side of the rack. Rinse lightly and pat dry.

    Mix the rub

    In a bowl, whisk together brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, chili powder, and cumin until evenly combined.

    Apply rub

    Pat the ribs dry again. Generously rub the spice mixture on both sides of the rack, pressing it into the meat. Let sit at room temperature for 15-20 minutes to let the rub adhere.

    Prepare for baking

    Line a baking sheet with heavy-duty foil or parchment. Place a rack over the sheet to elevate the ribs.

Baking

    Bake low and slow

    Preheat oven to 300F (150C). Place ribs on the rack bone-side down, wrap loosely with foil with a splash of water or apple juice to keep moist, and bake for 2.5 to 3 hours until the meat is tender.

Glazing and Finishing

    Make glaze

    In a small bowl, whisk together Black Dog BBQ sauce, brown sugar, apple cider vinegar, Worcestershire sauce, and salt until smooth.

    Glaze and finish

    Remove ribs from oven, increase temperature to 350F (175C). Brush the glaze over the ribs, return to the oven and bake uncovered for 15-20 minutes until glossy and caramelized. For extra caramelization, broil for 1-2 minutes watching closely.

Serving

    Rest and serve

    Let the ribs rest for 10 minutes after removing from the oven. Slice between the bones and serve with extra glaze on the side.
