Preheat oven
Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Cook pasta
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package directions. Drain and set aside.

Prepare lobster
If using lobster tails, remove meat from shells and cut into bite-sized pieces. Set aside.

Build béchamel
Slowly whisk in the milk and heavy cream, continuing to whisk until the sauce thickens and coats the back of a spoon, about 5-7 minutes.

Season béchamel
Season with salt, black pepper, garlic powder, and paprika.

Melt cheese
Remove from heat and stir in provolone, mozzarella, and parmesan until melted and smooth.

Combine pasta and lobster
Fold the cooked macaroni and lobster meat into the cheese sauce until evenly coated.

Season to taste
Taste and adjust salt and pepper as needed.

Assemble for baking
Transfer the mixture to a greased baking dish. Sprinkle the panko breadcrumbs over the top and dot with small bits of butter or drizzle with melted butter.

Bake
Bake in the preheated oven for 20-25 minutes until bubbly and the top is golden.

Let the dish rest for 5 minutes before serving.

Prepare greens
Rinse and dry the mixed greens thoroughly.

Make vinaigrette
In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make a simple vinaigrette.

Dress greens
Toss the greens with the vinaigrette just before serving.

Taste and adjust seasoning if needed.
