Almond Crusted Salmon Filet Recipe

Almond crust

Method

Prepare crust

    Whisk egg

    In a shallow dish, whisk the egg and set aside.

    Mix crust dry ingredients

    In a separate bowl, mix almond meal or finely ground almonds with panko breadcrumbs, salt, and black pepper.

    Oil salmon

    Brush the salmon fillets lightly with olive oil and pat dry.

Coat salmon

    Egg dip and crust

    Dip each salmon fillet in the beaten egg, then press into the almond crust mixture to evenly coat all sides.

Cook salmon

    Preheat and sear

    Heat a heavy skillet over medium-high heat and add a little olive oil. Place crusted fillets into the skillet crust-side down. Sear 2-3 minutes until the crust is golden and set.

    Finish in oven

    Flip the fillets and cook 1-2 minutes on the other side, then transfer the skillet to a preheated oven at 400°F (200°C). Bake for 5-7 minutes, or until the salmon registers just 125-130°F (52-54°C) for medium-rare to medium.

Amaretto butter

    Melt butter

    In a small saucepan over low heat, melt the butter.

    Add Amaretto and lemon

    Whisk in the Amaretto liqueur and lemon juice; season with salt and black pepper. Keep warm until serving.

To serve

    Spoon the warm Amaretto butter over the salmon. Garnish with chopped parsley or lemon twists if desired. Serve immediately.
