    Prepare and season the steak

    Pull the steak from the fridge 20-30 minutes before cooking to come to room temperature. Pat dry with paper towels. Season all over with the kosher salt and freshly ground black pepper, pressing the seasoning into the surface.

    Preheat pan and oil

    Place a heavy skillet (cast iron preferred) over high heat. Once hot, add the neutral oil and heat until just shimmering and almost smoking.

    Sear the steak

    Carefully lay the steak in the hot pan. Sear without moving for 2-3 minutes until a rich brown crust forms. Flip the steak and sear the other side 2-3 minutes.

    Baste for flavor and finish doneness

    Reduce heat to medium-high. Add the butter, smashed garlic, and thyme to the pan. Tilt the pan and baste the steak with the melted butter for 1-2 minutes, cooking until the steak reaches your desired doneness (about 130°F/54°C for medium-rare). You can remove the steak earlier for rare or cook a bit longer for more well-done.

    Transfer the steak to a plate, loosely tent with foil, and rest for 5 minutes to let juices redistribute. Slice against the grain and serve with the pan juices if desired.
