Salmon

Steamed Broccoli

Roasted Cherry Tomatoes

Method

Prepare the Salmon

  1. 1

    Season the Salmon

In a small bowl, mix together olive oil, lemon juice, salt, black pepper, and garlic powder. Rub this mixture over the salmon fillets and let them marinate for about 15 minutes.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Once hot, place the marinated salmon fillets on the grill skin-side down. Grill for about 5-6 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Prepare the Steamed Broccoli

  1. 3

    Steam the Broccoli

In a pot, bring 1 cup of water to a boil. Place the broccoli florets in a steamer basket over the boiling water, cover, and steam for about 5-7 minutes until bright green and tender-crisp. Season with salt to taste.

Roast the Cherry Tomatoes

  1. 4

    Prepare the Tomatoes

Preheat the oven to 400°F (200°C). In a baking dish, toss the cherry tomatoes with olive oil, salt, black pepper, and balsamic vinegar. Spread them out in a single layer.

  2. 5

    Roast the Tomatoes

Roast in the oven for 15-20 minutes or until they are soft and starting to burst. Remove from oven and set aside.

Serve the Dish

  1. 6

    Plate the Meal

On a plate, place a serving of steamed broccoli. Top with a grilled salmon fillet and garnish with roasted cherry tomatoes. Serve immediately.
