Prepare Mahi Mahi
Season the Mahi Mahi fillets with salt and black pepper on both sides.

Crust the Mahi Mahi
Press the chopped cashews onto one side of each seasoned Mahi Mahi fillet to create a crust.

Pan-sear the Mahi Mahi
In a large skillet, heat olive oil over medium-high heat. Place the crusted side of the fillets down in the skillet and cook for about 4-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork. Remove from skillet and keep warm.
Preserved Lemon Beurre Blanc Sauce

Add Wine and Reduce
Pour in the white wine and bring to a simmer. Reduce the mixture by half, about 5-7 minutes.

Add Preserved Lemon
Stir in the minced preserved lemon and lemon juice. Whisk in the remaining butter, piece by piece, until the sauce is smooth and emulsified. Season with salt and black pepper to taste.
Orzo and Green Beans

Cook the Orzo
In a saucepan, bring vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

Combine Orzo and Green Beans
Add the cooked orzo to the sautéed green beans and toss to combine. Adjust seasoning if necessary.
Assembly

Plate the Dish
On a serving plate, place a generous serving of the orzo and green beans. Top with the pan-seared Mahi Mahi fillet and drizzle with preserved lemon beurre blanc sauce. Garnish with diced red bell pepper.
