    Prepare the Broth

    In a large pot, bring the vegetable broth to a boil over medium heat.

    Add Vegetables

    Add the diced carrots, celery, and potatoes to the pot. Stir to combine.

    Season the Soup

    Add salt, black pepper, thyme, and bay leaf to the pot. Stir well.

    Simmer

    Reduce the heat to low and let the soup simmer for about 30 minutes or until the vegetables are tender.

    Serve

    Remove the bay leaf before serving. Ladle the soup into bowls and enjoy.

Salad

    Prepare the Salad Base

    In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

    Make the Dressing

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

    Toss the Salad

    Drizzle the dressing over the salad and toss well to coat the ingredients.

Stuffed Potato

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Prick the potatoes with a fork and bake for 45-60 minutes until tender.

    Once baked, allow the potatoes to cool slightly. Cut them in half and scoop the insides into a bowl.
