Method

Preparation

  1. 1

    Bake the Potatoes

Preheat the oven to 425°F (220°C). Scrub the Russet potatoes under cold water to clean them. Poke holes in each potato with a fork to allow steam to escape. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

  2. 2

    Cook the Bacon

While the potatoes are baking, cook the bacon slices in a skillet over medium heat until crispy. Remove from the skillet and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.

  3. 3

    Prepare the Green Onions

Wash the green onions and chop them into small pieces, separating the green parts from the white parts.

Assembly

  1. 4

    Cut and Stuff the Potatoes

Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Slice each potato lengthwise and gently squeeze the ends to open them up. Fluff the insides with a fork, adding butter, salt, and black pepper to taste.

  2. 5

    Add Toppings

Sprinkle the crumbled bacon evenly over each potato, followed by the shredded cheddar cheese. Add a dollop of sour cream on top and garnish with the chopped green onions, using both the green and white parts.
