    Slice the Onions

    Thinly slice the yellow onions and set aside.

    Mince the Garlic

    Mince the garlic cloves finely and set aside.

Cooking the Soup

    Sauté the Onions

    In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 30-40 minutes until the onions are caramelized and golden brown.

    Add Garlic and Wine

    Add the minced garlic to the pot and cook for an additional 2 minutes. Then, pour in the dry white wine and deglaze the pot, scraping up any brown bits from the bottom.
