Method
Preparing the Filet Mignon

Season the Steak
Sprinkle both sides of the filet mignon with salt and black pepper, ensuring an even coating.

Making the Herb Butter

Mix Ingredients
In a bowl, combine softened unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix well until all ingredients are incorporated.

Chill the Butter
Transfer the herb butter mixture onto a piece of parchment paper, form it into a log, and roll it tightly. Refrigerate until firm, about 30 minutes.
Preparing the Loaded Baked Potato

Load the Potatoes
Once baked, remove the potatoes from the oven. Cut a slit in the top, fluff the inside with a fork, and add butter, sour cream, shredded cheddar cheese, sliced green onions, and bacon bits as desired.
Plating the Dish

Place the seared filet mignon on a plate, top with a slice of herb butter, and serve alongside the loaded baked potato.
